Healthy Peanut Butter Fudge

Ingredients:

  • 1 cup peanut butter (best ingredients are just peanuts + salt, I purchase mine from aldi)

  • 2 cups desiccated coconut

  • 1/2 cup melted coconut oil

  • 4 Tbsp maple syrup

  • 2 pinch sea salt (optional, depending on the saltiness of the peanut butter)

  • 1 tsp pure vanilla extract


TOPPINGS optional

  • melted dark choc

  • coconut flakes

  • crush peanuts



Instructions

  • Line a standard 9x5 inch baking tin with baking paper and set aside

  • Add desiccated coconut to a food processor and blend on high until a creamy/ buttery texture is formed(this took me about 5 minutes)

  • Next add peanut butter and melted coconut oil and pulse once more.

  • Then add maple syrup (NOTE- If you add too much maple syrup, the mixture can seize up and get thick, so just add it slowly)

  • Next add salt and vanilla and mix.

  • Transfer mixture to baking tin and spread into an even layer. Add desired toppings if you wish

  • Freeze until firm (about 10-15 mins)

  • Once its set slice into even squares (about 21)

  • Enjoy!! Store leftovers in the fridge or freezer!!
