Healthy Peanut Butter Fudge

Ingredients:
1 cup peanut butter (best ingredients are just peanuts + salt, I purchase mine from aldi)
2 cups desiccated coconut
1/2 cup melted coconut oil
4 Tbsp maple syrup
2 pinch sea salt (optional, depending on the saltiness of the peanut butter)
1 tsp pure vanilla extract
TOPPINGS optional
melted dark choc
coconut flakes
crush peanuts
Instructions
Line a standard 9x5 inch baking tin with baking paper and set aside
Add desiccated coconut to a food processor and blend on high until a creamy/ buttery texture is formed(this took me about 5 minutes)
Next add peanut butter and melted coconut oil and pulse once more.
Then add maple syrup (NOTE- If you add too much maple syrup, the mixture can seize up and get thick, so just add it slowly)
Next add salt and vanilla and mix.
Transfer mixture to baking tin and spread into an even layer. Add desired toppings if you wish
Freeze until firm (about 10-15 mins)
Once its set slice into even squares (about 21)
Enjoy!! Store leftovers in the fridge or freezer!!
