Healthy (no bake) Caramel Slice Heaven

CARAMEL SLICE (no bake) HEAVEN 🤤🤭🍫. Oh yeah I did 😏😏.


Ingredients:


Base:

  • 3/4 cup oat flour

  • 1 tsp cacao

  • 2 tbsp coconut oil

  • 2 tbsp maple syrup

  • 1/2 tsp vanilla extract.


Caramel:.

  • 1 cup dates (soaked in boiling water for 15 mins)

  • 1/2 cup cashews (soaked in boiling water for 15 mins).


Choc Layer:.

  • 1tbsp coconut oil

  • 1 tbsp cacao

  • 2 tsp maple syrup

  • NOTE** I also added 4 squares of 90% dark choc (melted) for extra chocolatelynessssss.



METHOD:

  1. Line a small, square or rectangular baking tray with baking paper.

  2. In a bowl, mix oat flour, cacao, coconut oil, maple syrup and vanilla extract together and evenly press into the base of tray, then pop into the freezer to harden.

  3. Now for the caramel, drain and rinse both cashews and dates then process in a food processor with the vanilla until smooth. Add 1 tbsp. pure maple syrup if additional sweetness is required.

  4. Remove the base from the freezer and spread the caramel mixture on top evenly and return to the freezer for approximately 30 minutes or slightly firm to touch.

  5. Once caramel is firm, melt coconut oil over a low heat. Mix in cacao, maple syrup and extra choc pieces.

  6. Pour over the top of the caramel and freeze again until set. I left it for about an hour and it was good to go! BOOM. Eat it all in one afternoon cos it tastes so good. Or have self control... your choice 🤨😏🍫
