Death by Healthy Choc Brownies

Ingredients:
· 2 egg whites
· 1sp of vanilla bean powder or vanilla extract
· 1 tbsp coconut oil
· Pinch of salt (approx. ¼ tsp)
· ¼ cup of plain low fat Greek yoghurt (I use chobani)
· ½ cup of maple syrup (use an alternative sweetner you like; honey, agave, coconut sugar etc)
· 90mL milk of choice
· ¾ cup oat flour (I literally just process oats in a blender and BOOM oat flour. Great carb source and super cheap!)
· ¼ tsp baking powder
· ¾ cup of unsweetened cocoa powder
· 50g of finely chopped dark chocolate ( I use lindt 70-90%, whatever works for you though)
Method:
1. Preheat oven to 180 degrees Celsius and line a square baking pan with baking paper, or use oil or butter of choice.
2. In a bowl, whisk together the egg whites, vanilla, oil and salt. Gently stir in the Greek yoghurt, mixing until smooth.
3. Stir in maple syrup and the milk. Then add cocoa powder and baking powder. Then slowly add flour until it is just combined.
4. Gently fold in the 3/4 of the dark chocolate, leaving the rest for toppings.
5. Spread the batter into the lined baking pan and sprinkle the remaining chocolate on top.
6. Bake at 180 degrees for 15-20 minutes. (if you are after fudgy gooey brownies, bake for 15 minutes, the longer you leave them the cakier they will become)
7. If you can wait (hehe) leave the brownies to sit at room temperature for an hour or so to create that fudgey texture. Then cut into 16 squares !!
